Seed, Soil and Harvest


Gardening is not all fun but I do enjoy it. One thing I noticed is the garden is only enjoyable until it turns into work. Taking breaks and having the right tools and equipment is essential. I also enjoy having the company (help) of my family out there with me.

I am still amazed by the miracle that a seed represents. Inside a seed there is all of the information necessary to produce a plant and eventually a fruit or vegetable. All that is needed is the right combination of soil, water and light. Life is like that. I view most actions as seeds. The way you treat others is seed. The money you spend is seed. The food you put in your body - seed. The reward is the harvest. I would rather eat vegetables and and meat raised here than not know what is in the soil that produced our food. I'll admit sometimes pesticides are necessary, but with recent report of poisonous pet food and diseases on the vegetables, I want to know where my food is coming from!

The time you spend and the words you speak are also seed. You can plant a seed in an individual and then nurture and water that soil and see something good come from it. So let's all speak good seed to others and encourage (water) that seed to grow and see a great harvest of goodness and love.

Garden Recipes

Zucchini Casserole

6 cups sliced zucchini
1/2 cup diced onion
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1 pkg stuffing mix (stove-top)
1/2 cup melted butter
shredded cheddar cheese

Boil zucchini and onion in salted water for 5 minutes. Drain. Combine soup, sour cream and carrots. Fold into zucchini and onions. Combine butter and stuffing mix. Cover bottom of 9x13 baking dish with 1/2 of the stuffing. Add zucchini mixture. Top with remaining stuffing, and top that with shredded cheddar cheese. Bake at 350 degrees for 40 minutes.
